Unbelievable, fantastically great, PEANUT BUTTER PIE!
This is my husband’s favorite pie, but I must confess to only baking it occasionally. It’s a little tricky, and it takes time, but it’s sure worth it. I’m not sure where I got this recipe from, either.
Crust: ¼ c. chopped roasted peanuts
1 c. graham cracker crumbs
1/3 c melted butter
Combine all ingredients and press into place in a 9” pie plate. Freeze while preparing filling.
Filling: 1 ¼ c. creamy peanut butter
1 (8 oz) pkg. Cream cheese, room temp
1 c confectioners sugar
2 tblsp butter melted
1 ¼ c chilled whipped cream
1 tblsp vanilla.
With electric mixer, beat peanut butter, butter, cream cheese, ½ c sugar in butter bowl. In medium bowl beat cream with remaining sugar and vanilla until peaks form. Fold cream into peanut butter mixture and spoon into chilled crust. Refrigerate until firm.
Topping: ½ c whipping cream
4 oz. Semisweet chocolate, finely chopped
In a small heavy saucepan, heat cream until almost boiling. Reduce heat to low. Add chocolate and stir until melted and smooth. Cool slightly, pour over filling. Tilt pie so that it is coated completely. Refrigerate one hour before serving.
However, you can tell by the picture that I just added a few chocolate chips instead of the chocolate frosting.
